Hatch Chile Beer Can Chicken

It’s Hatch season…and that means it’s time for spicy goodness at Central Market’s annual Hatch Chile Festival. This is one of my favorite festivals because it signals the “almost” end of summer…AND I get to try a ton of amazing samples, all made with Hatch Chiles.

Hatch Chiles are these delicious creations from Hatch, New Mexico that are in season between August and October. There is so much flavor packed in these tasty peppers that lend so much depth to any dish. They come in different varieties from mild to hot. The hot chiles really can make your brow sweat, which can be surprising considering the size of the pepper (but I’m not complaining).

A Digital View of New Orleans

We had such an amazing time in New Orleans, which I think is pretty evident considering I took over 300 pictures. There were so many photo ops that I couldn’t snap my photos fast enough. I don’t have the most high tech camera but I must say, my little Canon PowerShot has been pretty amazing to me so far.

Cajun Bliss…New Orleans Style!

Matt and I just got back from an amazing long weekend in New Orleans. I’m ashamed to admit that it’s taken me this long to finally make it down to the Big Easy, but I made it, and it was amazing!!

My dad is a superb Cajun cook so growing up I really grew to love the cuisine. So it came as no surprise that I completely fell in love with New Orleans the moment I had my first bite of Shrimp Creole and a sip of my first Hurricane. Summertime and Lobster Rolls

Ever since my trip to Boston last year I have been craving a lobster roll! Unfortunately, living in Texas you aren’t always thinking lobster for dinner, especially due to the steep price tag. Then every once in a while, like Christmas in August, a local seafood market offers up a fantastic reason to eat lobster for dinner…Lobster Sale!!!

Monday morning I came in to work with a lovely gift in my inbox, Central Market was having a sale on live Main Lobsters for $9.99 a pound. There’s only one thing you do when you get an email like that, you re-plan your meal for that evening, jump in your car, and get some lobster! So with a beautiful 1 3/4 pound live Main Lobster and Canadian Lobster Tail in tow the evening’s meal became crystal clear in my mind!!! Continue reading

Real Foods of India Pt. 4

Indian cuisine has opened my eyes to a different world of flavor. Whether you’re cooking for meat lovers or vegetarians, Northern or Southern Indians, there is a cuisine for everyone.

Throughout the 4 part series I’ve focused on recipes I learned while attending the Real Foods of India cooking class at the Milestone Culinary Arts Center. Minal Jhaveri, from Gourmet Journey, was a wonderful host and taught us some amazing vegetarian dishes. The great thing about these dishes is the versatility. You can use the base of the recipes to get you started, but feel free to sub out the different ingredients for more of your favorites. Check out the tips for each dish to help you along the way.

I learned so much from the “Real Foods of India” cooking class at Milestone Culinary Arts Center, led by Minal Jhaveri. We’ve already covered some amazing recipes in part 1 and 2, and now I wanted to share with you two more amazing recipes for, Saag Paneer and Saffron & Nuts Pulav.

I enjoyed my experience so much that I recently attended an Indian Breads cooking class led by Mrs. Jhaveri. I can’t wait to share all five of the amazing breads we made in another series. I recently attended the “Real Foods of India” cooking class at the Milestone Culinary Arts Center in Dallas, led by Minal Jhaveri from Gourmet Journey. Four hours of culinary fare and eight delicious dishes later…I walked away one step closer to mastering another challenging cuisine.

Real Foods of India: Pt.1

Due to all of the fabulous recipes and great information I’d like to share I’ve made this into a four part series. So, here’s Part 1 of Real Foods of India. Check back soon for more great recipes and tips.

I recently had the pleasure of attending the “Real Foods of India” cooking class at the Milestone Culinary Arts Center in Dallas, led by Minal Jhaveri from Gourmet Journey. Not only was it an educational evening, but it was every bit a piece of heaven to my taste buds.

Working for an Indian owned company has definitely broadened my horizons when it comes to different types of food. Needless to say, I have fallen madly in love with Indian food and was really excited to delve in to the culture’s many different tastes and techniques.

dishKarma – My Ultimate Meal

A few weeks ago a representative from dishKarma.com contacted me about submitting a video for their blog. This is a great organization that partners with Feed America to help battle the fight against hunger in the U.S. For every 5th dish you upload to their site, a meal will be donated to Feed America, an organization that helps aid local food banks!
