Snackin’ with Sarah Sellers: Mushroom & Mozzarella Crostinis

We’re finally getting into my favorite part of American Idol…the live shows!! If you guys have been following along I’ve been cooking up some scrumptious recipes for Yahoo! Music blogger, Lyndsey Parker, and her Reality Rocks blog.

Since Idol is giving us three episodes this week I’ve got 3 simple and delicious snacks to share. Tonight I’m starting out with a hearty snack that really is incredibly easy to make. If you’re having any trouble finding Shitake mushrooms or you don’t want to fork out the extra cost, just use all baby bella mushrooms. They work just as well.

Yields around 20-25 crostinis

Ingredients

  • 1 tbsp extra virgin olive oil
  • 1/2 cup chopped yellow onion, around 1/2 an onion
  • 1 garlic clove, minced
  • 2 8oz packages assorted mushrooms, sliced *I used baby bella, shitake, and portabella mushrooms
  • 1/2 tbsp fresh thyme, minced
  • salt and pepper
  • 1 baguette, sliced
  • cooking spray
  • 1/2 cup mozzarella, shredded

Preheat oven to 350.

Heat the olive oil in a large skillet over medium high heat. Saute the onions until soft then add the garlic. Saute for 30 seconds until fragrant.

Add the mushrooms, thyme, and season with the salt and pepper. Saute until nice and brown and the access liquid has evaporated. Adjust seasoning accordingly. Set aside.

While the mushrooms are sautéing place the baguette slices on a large cooking sheet and spray with the cooking spray.

Bake in the oven for 5 minutes until lightly toasted, remove from the oven.

Top the bread with the mushroom mixture.

Then sprinkle with some cheese.

Bake in the oven until the cheese is melted.
