Chicken Enchilada Casserole

Do you have that one genre of food that hits every inch of your taste buds? A genre that you know you could eat 3-4 (maybe even more) times a week, but you restrain for fear of isolating yourself from the throng of culinary options? Well, I do, and it’s Mexican food. Throw some chiles, cumin, cilantro, avocados…etc etc…into any dish and I’m immediately comforted.

Quick & Easy Snacking – American Idol Top 11

American Idol’s Top 11 results show had it all; flash, cheese, product placement, and one of the most shocking eliminations I’ve seen in all my years as an Idol fan. Last night’s Motown themed soul-fest delivered strong performances, leaving me wandering who would be the unlucky contestant to miss the Top 10 and Idol tour by just one spot. What I didn’t expect was for Casey Abrams, the eccentric and show stopping Seth Rogen look-alike, to be the one at the bottom.

Week by week Casey has delivered something that I can’t say for every other contestant, passion and originality. Every time he steps on stage I’m anxiously waiting to see what he’ll do next. Whether you were dabbing your tears or jumping for joy over Karen’s departure, I hope you had the chance to enjoy my Idol top 12 recipes. Yahoo’s super fab music lover and creator of the popular “Reality Rocks” blog, Lyndsey Parker, posted some more quick and easy snacking recipes from yours truly.

Quick & Easy Snacking – American Idol Top 24

Phew it’s been a crazy few months. I have SERIOUSLY neglected my foodie duties and haven’t had a proper food post in way too long. Amidst all the madness a fellow blogger has brought me back to some very solid roots and got me cooking again!

Yahoo’s super fabulous Lyndsey Parker of Reality Rocks was kind enough to give me some props after my way too short lived Idol run (damn I wanted a taste of that Idol mansion)! ;)
